Here's my current plan:
Two loaves of whole wheat sandwich bread
Zucchini Bake
Green Bean Casserole
Tamale Casserole
Baked Chicken and Brown Rice Bake
Turkey and Bean Chili
Chicken stock
Cream of ______ Soup
Eggplant Lasagna (with noodles)
I don't really want to freeze a meal that we haven't tried yet, so we're adding new recipes to our menu plan all the time! We tried several new ones in September and October that made the cut for this list. I've got my eye on some new recipes to test out in November as well. I'm thinking we'll test:
We're pretty organized around our house so I figure we'll probably have a rough plan of when we'll eat what so we know about how long these meals will last us. I'd love to have them last until I start work again in March, but we'll see if our freezer can accommodate that! I'm hoping to set aside at least one full weekend in December to make, bake, assemble, and freeze everything. We'll buy aluminum casserole dishes so we can recycle them when we're done. I can write on the top what it is and how it needs to be cooked in sharpee, which I figure will be helpful as well.
Okay, mamas, what are your suggestions on how much food to freeze?

Oh I would love to have a fully stocked freezer and I don't even have a baby on the way :) We are on such a strict budget these days that we don't have the extra money month - to - month to stock our freezer except for deer meat... which I don't eat. Maybe I can just come to your house and if I fix it for you and clean up after myself I can eat with you guys! :)
ReplyDeleteHa! You are hired, Skye! :-) I'm lowering our January grocery money in the budget in hopes that we'll not need to buy much in terms of food in January. That doesn't do us much good when I'm spending double in December, but it will help in January... hopefully. Because I'm sure we'll be spending money on lots of other things! :-)
