Dutch Oven Crusty Bread
from Simply So Good
3 cups unbleached flour
1 3/4 teaspoon salt
1/2 teaspoon yeast
1 1/2 cups water
Mix dry ingredients together well. Add the water and mix until a very sticky dough forms. Cover the bowl with plastic wrap and leave for 12-18 hours. I left mine for about 16 hours in the laundry room because it's a little warmer and not quite as drafty as the kitchen.
After 12-18 hours pre-heat the oven to 450 degrees. While it's pre-heating, knead the dough on a floured surface. It will be very sticky - use lots of flour! When the oven is pre-heated, put your empty covered dutch oven in it. Leave the dutch oven in the oven for 30 minutes. While it is heating up, wrap the floured dough in plastic wrap.
Once the dutch oven is warm, drop the dough into it. Don't grease it or anything, just toss the dough ball in the dutch oven.
Put the lid back on and put the whole thing in the oven for 30 minutes. After 30 minutes, remove the lid and bake for another 15 minutes. Honestly, I was shocked when I removed the lid to see this:
Remove bread from the dutch oven and allow to cool completely on a cooling rack before slicing.

ReplyDeleteThanks, Amanda! It was delicious! And SUPER easy! A little thought, but throwing the ingredients together at night and baking in the morning or vise versa is perfect! I'm making another loaf tonight!
ReplyDeleteHey Leanne! Don't you just love this recipe. I made it too. My family loved it. My husband thought I was pretty cool to be able to make homemade bread. Do you think I should tell him how simple it was?! ;)
ReplyDeleteBrandi, Thanks for the comment! Definitely don't tell him it was so easy! ;-) I make my own sandwich bread but I love this recipe because it's SO easy. No dishes, no kneading, just a little flour on the counter and one dish and we're good! And the dutch oven just needed a good rinse and it was perfectly clean!
ReplyDeleteI'm going to try this this week! Question: did you have any trouble with the yeast? That's the one thing that stumps me every single time I attempt to bake bread. Something about how the water I use is never warm enough to activate the yeast or something. Advice?

Thanks for the comment, Pamela! I didn't have any trouble with the yeast. What you want to be sure is that your water is warm and not hot. If it is too hot, it won't activate and if it is too cold. I try to think about it like bath water. Hot, but not too hot to touch. Good luck!

ReplyDeleteI'm sorry, Pamela, I completely spaced on your question! Yes, tap water is completely fine. You can even microwave it for 30 seconds or so to make it hot if you don't want to wait.
